Penne Pasta with Spicy Shrimp

This is an Italian pasta dish with a bit of spice added to it. The penne pasta is the perfect shape for this dish and the shrimp go nicely with it. There is room for customization and this is something that every member of the family can enjoy if they like a little kick to the food.

Ingredients:

3 cup penne pasta (not cooked)
1 tbsp. butter
1 tbsp. oil
2 lb shrimp (cleaned)
½ tsp. red pepper flakes
24 oz tomato sauce
¾ cup half and half
4 cups fresh spinach, chopped

Directions

1. Cook the penne pasta according to the directions on the package. Drain and put aside.

2. In a pan over medium heat but the butter and oil. Allow the butter to melt. Add the shrimp to the pan along with the red pepper flakes. Cook 3 to 5 minutes or until the shrimp turn pink. Remove the shrimp from the pan.

3. In the pan that the shrimp was cooked in add the tomato sauce. Add the half and half. Allow this mixture to come to a boil. Stir it well to make sure everything is blended. Add the spinach and cook until the spinach wilts. Add the penne pasta back to the pan. Add the shrimp and allow the mixture to cook until it is heated. The shrimp pasta is then ready to be served.

Notes:

This recipe can have the heat level adjusted as needed. If some people like it really spicy they can add more red pepper flakes. If a person does not want it as spicy they can add less red pepper flakes. Salt and pepper can be used as needed. It is best to work with fresh shrimp as they have a better flavor than shrimp that have already been cooked and then frozen again.
