Ingredients

For the latik:

  • 2 cups of coconut milk
  • 2 tbsp white sugar

For the maja blanca:

  • 2 cups of coconut milk
  • ¾ cup cream corn
  • ½ cup cornstarch
  • ½ cup white sugar
  • 3 tbsp corn kernels




Instructions

  1. In a saucepan put 2 cups of coconut milk and allow it to come to a boil. Stir the coconut milk constantly while the oil began to separate from the creamy milk. This should take around 30 minutes. Skin off the top and reserve the oil. Reduce the heat for the saucepan to medium. Add 3 tablespoons of sugar. Allow the mixture to cook for another 30 minutes. At this time it should turn brown and have a crumbly appearance. Remove this pan from the heat and set aside.
  2. Using the reserved coconut oil grease a pie pan.
  3. In a saucepan heat 2 cups of coconut milk, the cream corn, ½ cup sugar, and the corn kernels. Allow the mixture to cook until thickened which will take around 5 minutes. Put it into the pie pan.
  4. Allow the mixture to set. Cut into slices and serve with the latik which was made previously.

Notes

This dessert also goes by the name coconut pudding. Some people may say that this recipe is a little on the sweet side. If a person does not want it that sweet they can add less sugar. If a person wants a little variation on the dessert they can top it with flaked coconut. They can also top this dessert with a little bit of cheddar cheese for a more savory dish.
